Drop the beet

Ingredients:

1 medium beet
3 medium carrots
1/2 white onion
1/2 cup Basmati rice
1 portobello mushroom
1 1/2 inch ginger (fresh, minced)
1 tbsp safflower oil
1 block extra firm tofu

Get cooking:

Cook rice with 1 cup of water and set aside when done. Sauté cut tofu (1 inch strips fairly thin) in oil until light brown all around but not yet at desired medium brown color, then add diced onion and julienned carrots. Sauté until golden brown and add mushroom, ginger, and beet until everything is a nice golden brown. Serve over rice.

We are new as well but the need to prioritize time is very important, try to set a goal each week to get posts out and make it something that interests you so you want to do it! Hope that helps.
