This burger does not need much of an introduction, it speaks for itself. Portobello mushroom grilled on a skillet covered in ranch and avocado on a bun with lettuce. Oh yes.
Easiest burger ever!
Vegan homemade ranch
Ingredients: (For 1 burger)
1 Portobello mushroom
1 tbsp olive oil
1 tsp salt & pepper
2 slices whole grain bread (or bun of choice)
handful of lettuce (we used kale/spinach mix!)
desired ranch topping
1 c vegan mayo (Earthbalance)
¼ c unsweetened almond milk
1 tsp onion powder
1 tsp garlic powder
1 tsp parsley
½ tsp dill
¼ tsp salt
¼ tsp chives
1 tbsp apple cider vinegar
First time we made a homemade ranch was the Super Bowl with broccoli wings. Imagine the greatness.
1) Let’s start with the ranch, combine all above ingredients. I found that this vegan ranch is a bit thinner than regular ranch but it is oh so much better!
2) Clean and remove stem and gills of mushrooms. Coat in olive oil and salt and pepper and toss over high heat on the stove top.
3) When shroom is browned (about 10 min) create your burger and enjoy!
Ranch recipe makes about 1½ cup.
