Spicy Lentils with Red Sauce

Delicious Lentil dish with a spicy twist on a bed of rice. This dish is a punch of flavor that will put a new spin on your average weekday meals. Only takes about 30-40 min to make!

Red Sauce

We often dine on this Middle Eastern inspired dish. Can be served as a main dish or a side. So good we even had at our families (non-vegan) Thanksgiving dinner, and it was a hit! Must try even for the skeptics.

Serves approximately 4.

Ingredients~
Lentils:
2 tbsp olive oil
½ yellow onion, chopped
2 cloves garlic, minced
¾ tsp cumin
½ tsp cinnamon
½ tsp salt
2 c vegetable stock or broth
1 c brown lentils
fresh cilantro or basil for topping (whichever you have or prefer)
Rice:
1 ¾ c water
²⁄ ³ c jasmine rice
¼ tsp salt
Red Sauce:
2 tsp olive oil
½ yellow onion, chopped
1 clove garlic, minced
1 ½ c tomato sauce
3 tbsp white vinegar
½ tsp red pepper flakes
¼ tsp salt

Get Cooking~
1) Lentils: In a large saucepan heat oil over medium heat and add chopped onion. Sauté until golden brown. Add garlic, cumin, and cinnamon and sauté for a minute longer, not letting garlic brown. Add stock, lentils, and salt and bring mixture to a boil over high heat. Cover and simmer until firm, about 30 minutes.
2) Rice: Bring water and salt to boil in large pan and add rice, reduce heat to low and simmer until rice is tender and water is absorbed. (Follow package instructions if need further instructions)
3) Red Sauce: In medium saucepan heat oil over medium heat and add chopped onion.Sauté until golden brown. Add garlic and sauté for a minute longer, not letting garlic brown. Stir in tomato sauce, vinegar, red pepper flakes, and salt. Let mixture bubble then reduce heat to low and simmer for about 5 minutes.
4) Assemble: Rice, Lentil mixture, Red sauce, garnish with herb of choice, devour.

Note: Lentil mixture will be like a sauce, this is correct! Serve with the watery-spice mixture for maximum flavor.
